RECIPE: Here’s how you make it:

  1. Clarify some butter (optional).
  2. Bring butter to under boiling temperature, aim for 160 degrees
  3. Slice some shiitake.
  4. Poach shiitake slices in butter briefly, around 3-4 minutes until golden
  5. Grill your steak however you enjoy them
  6. Add steak juices to butter-poached shiitake to marinate
  7. Top steak with shiitake and juices
